  • Directions for Fried Chicken:
  • Arrange drumsticks in a single layer in a shallow dish and add the orange juice. Cover and marinate in the refrigerator for at least 4 hours or overnight, turning the drumsticks once or twice.
  • Combine the flour, thyme, cinnamon, paprika, and salt in a medium-size bowl. Reserve 2 tablespoons of the mixture for the Orange Cream Gravy and set aside.
  • Beat the egg in a small bowl and stir in the buttermilk.
  • Drain the drumsticks, discarding the marinade, then roll them into the flour mixture again, firmly pressing the flour with yours hands so plenty of it clings to the chicken. Arrange the coated chicken pieces on a platter (they man be loosely covered with aluminum foil and refrigerated until needed.)
  • Pour oil to a depth of 2 inches into a large,deep heavy skillet with a tight-fitting lid. Heat over medium-high heat to 375 degrees. Using tongs, carefully add the chicken pieces and cook until they are evenly browned, about 2 minutes. Cover, reduce the heat to medium-low and cook, turning frequently until the chicken is tender when tested with the tip of a paring knife, and the juices run clear; about 25 minutes.
  • Orange Cream Gravy Directions:
  • Melt the butter in a small saucepan over medium heat. Stir the flour into the butter and cook until golden, about 4 minutes. Then whisk in the remaining ingredients. Cook stirring frequently, until the sauce is smooth and thick, about 5 minutes.
  • Taste the gravy and adjust the seasoning, if necessary.
