How to make it

  • Cover peas with water in a large saucepan. Bring mixture to a rolling boil. Cook over high heat 5 minutes. Remove from heat. Let set 1 1/2- 2 hours. Drain thoroughly.
  • In a heavy pot, bring 1 quart water to a rolling boil. Add ham and cook over high heat 15 minutes. Add drained peas. Cover and simmer 30 minutes. Add onions, peppers, sugar, and seasoning. Cover and simmer until peas are tender, approximately 25 minutes. Stir hot rice into mixture.

    I love the jalapeno part. I make a version of this, but I use dry field peas. I can't wait to try yours, it sounds so good!
