How to make it

  • Saute onion, celery, and bell pepper in butter until tender. Add crawfish, paprika, green onion, parsley, jalapeno pepper, and seasonings.
  • Cook on medium heat 4-5 minutes.
  • Add milk, cornstarch, tomato sauce, and lemon juice, stirring until mixture begins to thicken. Remove from heat. Let mixture cool 10 minutes.
  • Fold in bread crumbs. Pour filling into pie crust. Arrange top crust over filling and pinch side to seal. Cut 3 1-inch slits in the top of the crust.
  • Bake at 425 degrees 7 minutes.
  • Lower to 375 degrees and bake for 35 minutes.

    This looks superb. I love seafood, and I would like to try this, and I have a great fish/poultry/game seller nearby. However being British I have to constantly check with my US friends that I have the ingredients right. If I went into the fish shop and asked for crayfish tails would I be right?
    PS I'd love it if you'd be my cooking friend, I'm sending an invite your way. I hope you'll accept.
