How to make it

  • Preheat oven to 325
  • In mixing bowl, beat peanut butter and sugar with mixer until creamy
  • Add eggs and continue to beat until blended
  • Stir together flour, cocoa, baking soda, and salt
  • Add to peanut butter mixture, mixing on low until blended
  • On lightly floured surface, turn out dough and knead in peanuts and 1/2 cup mini chips
  • Shape dough into 13x3 log on a greased baking sheet
  • Bake 40 minutes
  • Put on rack until cool
  • With a serrated knife, in a gentle sawing motion, cut log on the diagonal into 1/2 thick slices
  • Put on greased baking sheet
  • Bake for 7 minutes, turn cookie over, and bake another 7 minutes
  • Cool on rack
  • In saucepan, add 1 cup mini chips, 1 1/2 tbls. peanut butter, and shortening and cook over low heat until melted
  • Dip one end of cookie into chocolate mixture
  • Put on waxed paper until chocolate hardens
