How to make it

  • Preheat oven to 425 degrees F.
  • Roll out bottom pastry crust and fit into 9" pie plate.
  • Break Ritz crackers coarsely into pie shell.
  • Combine water, sugar and cream of tartar in saucepand.
  • Simmer gently for 15 minutes.
  • Add lemon zest and juice.
  • Cool.
  • Pour this syrup over crackers.
  • Dot generously with butter and sprinkle with cinnamon.
  • Cover pie with top crust.
  • Trim and flute edges.
  • Cut slits in top crust to allow steam to escape.
  • Bake for 30 to 35 minutes OR until crust is golden.
  • Remove from oven.
  • Serve warm.
  • Cut into 6 to 8 slices.

    Oh the memories. I was going through my Mothers recipes the other day and stumbles across the recipe she used to use. It was a piece of tattered cardboard, cut from the side of a Ritz box from heaven only knows, way back when. This is one of the classics that should never be lost. When I told our sons about it, they looked at me as if I had a third eye. I am going to have to make this very soon for them. Thank you for keeping this recipe alive.

    This is awesome made with either the Honey Butter Ritz crackers or the new Cinnamon Sugar Ritz Crackers...heavenly! Tastes JUST like apple pie :)

    Hi, Lacrenshaw! Yes, thanks for this old, old recipe. My mom used to make this when we were children and it does taste and look just like apple pie! 5UP

    So glad you posted this - the recipe isn't on the back of the Ritz box anymore, so I thought it was gone forever! Although there's probably a ritz.com or something, now that I think about it.
