Alabama Snowballs

Snowballs are rare, here, so I decided to make my own! Very similar to the traditional Buckeyes, but with white chocolate rather than milk. Cook time includes chill time and prep time includes dipping.
Ingredients
- 1 regular jar quality peanut butter(about 4 cups) shopping list
- 2T honey shopping list
- 4 cups crispy rice cereal shopping list
- 4 cups confectioners sugar shopping list
- 2lbs white confectioners coating(almond bark or candy coating) shopping list
- sprinkles or coarse sugar shopping list
How to make it
- Combine first 4 ingredients in large bowl.
- Refrigerate about 30 minutes
- Form into about walnut sized balls
- Refrigerate for at least 4 hours, overnight is fine
- Melt coating per package directions
- Dip each ball into coating, covering completely. Remove from coating bowl with a toothpick(these can be left and removed after coating dries, then "patch" the holes with touch of the melted coating)
- Immediately sprinkle each coated ball with desired decorations, as this dried very quickly.
- Let set until firm
- Store in a cool place
