Ingredients

How to make it

  • Day 1: Marinade in Buttermilk, Carrots, Garlick and Onions
  • Day 2: Turn in Marinade
  • Day 3: Wipe all marinade off
  • Roll speck en barbeque spice and paprika and stuff roast
  • Push cloves in up to head
  • Rub with salt and pepper
  • In Oven: Heat pot and potroast until brown, remove and rest for 5min
  • Wrap in bacon or net fat and fasten with tooth picks
  • While roasting heat oven to 180 degree celsius or gasmark 4
  • Roast in oven until tender about 3hours
  • On Barbeque: Wrap en bacon secure with tooth picks over medium coles or Weber rotisory
  • Cast Iron pot (Dutch Oven): Brown roast in pot, remove, rest and wrap in bacon or sheep net fat, secure, place back in pot, lid on
  • Keep direct heat away from bottom rather make a ring of cole round the sides also place some coles on top of lid. Check every half hour to ensure pot do'nt go dry and to turn roast

    This may go well if I substitute the Impala with venison roast. We have lots of that. But the only impala near here is the one in my driveway. *s*

    Sounds like a great recipe, in this neck of the woods the only Impalas are made by Chevy and it is real hard to get that rubber taste out of the leg. I do enjoy seeing the recipe though.
