Pepperoncini Banana Pepper Strata Recipe
Christmas Eve and sudden overnite guests - what to make for breakfast? After rummaging thru the fridge, this whipped up fast and was ready to bake in the morning.

Ingredients
  • 4 large eggs
  • 1 c. milk
  • 4 oz. grated cheese (I had jack, but any would be good)
  • 5- 6 slices of bread
  • 1/4 c minced sweet onion
  • 1/3 c. minced mild banana pepper ( I had rings in a jar)
  • salt and pepper to taste
  • dash of paprika

Directions
  1. Beat eggs,
  2. Add milk and mix well
  3. Stir in onion and peppers
  4. Lightly grease a glass 9X13 baking dish
  5. Lay bread in whole slices, then rip into pieces to cover bottom (the first four or so)
  6. Sprinkle grated cheese over bread
  7. Pour half of egg mixture over this
  8. Tear remainder of bread in almost cube like pieces and spread evenly throughout dish
  9. Pour remainder of egg mixture evenly over this and top with the cheese.
  10. Using a fork or spoon-back, press any "dry" bread down to submerge in egg mixture.
  11. Season with salt and pepper.
  12. Cover with wrap and refrigerate until morning
  13. ***** First, put on the coffee...then
  14. Preheat oven to 350
  15. Unwrap dish and sprinkle with paprika, let it sit out while the oven warms up and you have your first cup of coffee
  16. Bake for 40 min. or until knife in center comes out clean.
  17. Cool slightly and serve.
  18. Sit back and congratulate yourself for being so prepared.
