Warm Apple And Almond  Caramel Upside Down Cake Recipe

  • Topping:
  • 1/4 cup sliced almonds, toasted
  • 3 medium Gala apples
  • Caramel Sauce:
  • 1 cup granulated sugar
  • 1/4 cup unsalted butter, diced
  • 1/4 cup water
  • Cake:
  • 1 1/2 cups all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp each salt, ground ginger and cinnamon
  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk

Directions
  1. Topping:
  2. Butter a 9" cake pan and line bottom with parchment paper; butter paper. Sprinkle with toasted almonds.
  3. Peel and core apples; slice thinly and arrange in overlapping circles on bottom of pan until base is completely covered.
  4. Caramel Sauce:
  5. Combine sugar and water in a heavy saucepan and bring to a boil. Cook, occasionally wiping down sides of pan with a moist pastry brush, until mixture starts to turn a pale golden colour around the edges, about 5 to 8 minutes. Swirl golden edges to the centre and cook for 30 more seconds until it turns a medium golden amber colour. Remove from heat and whisk in butter. Carefully pour hot sauce over apples.
  6. Cake:
  7. Preheat oven to 350F.
  8. Blend flour, baking powder, salt and seasonings in a bowl. Beat butter and sugar together in a large bowl until creamy. Add eggs, one at a time, beating well after each addition. Beat in milk alternately with flour mixture until well blended, occasionally scraping down sides of bowl.
  9. Spoon batter over apples evenly.
  10. Bake in the centre of the oven for 40 minutes. Cool in pan on a rack for 10 minutes, then run a knife around the edge. Place a plate over the top of the pan and invert cake onto plate. Peel off parchment.
  11. Cool for 15 minutes, then cut into wedges and serve with dollops of vanilla-infused fresh whipped cream.
