Potato Candy Recipe
This is my grandmother's recipe and an old-fashioned fav. I don't know if anyone but me ever even heard of potato candy!!!

Ingredients
  • 1 medium sized potato, boiled, peeled, and mashed
  • 2 teaspoons creamy butter
  • 6 ounces coconut
  • 1 teaspoon vanilla
  • 1 pound of powdered sugar
  • 1/4 pound melted chocolate, unsweetened
  • Creamy peanut butter is optional

Directions
  1. Beat mashed potato, butter, coconut, vanilla, powdered sugar, and if desired some peanut butter until CREAMY.
  2. Put into buttered pan and chill until hard
  3. Pour 1/4 pound melted chocolate over the top.
  4. Chill until chocolate is cool and set
  5. Cut into square pieces and enjoy!

I make potato candy every year.I had never heard of it before but when I moved to wv years ago,this was one candy recipe I had to try.Your recipe is a little different,but sounds good.


My Aunt Minnie used to make this every year but I never obtained her recipe. This has to be it or close to it, sounds just like I remember. Thanks for bringing back a fond memory.
