We love this salad. One of the signs of an excellent restaurant in Chiang Rai is that they can do this well.

Thai chilies are hard to come by here in Nebraska LOL. I know that there are lots of chili varities in Thailand. Which ones would you use in Thailand for this dish? Maybe I can grow them. :)

The chilies I'm talking about here are halfway between a banana pepper and a jalapeno. A bit of a kick but not overwhelming. It looks like a 1/2 sized banana pepper. Perhaps there's a chili in the US that would substitute well.

I love this stuff. You can use japalenos or serranos with excellent results (serranos are hotter). I like this so hot it makes my scalp sweat.

The dressing was awesome. I didnt have sweet soy sauce, or molasses, but i used half soy half honey instead and it came out tasty enough.
