Ingredients
  • 1 large sweet potato
  • 1 potato
  • 1 carrot
  • 1 apple
  • 1/2 lemon, juice and grated rind
  • 1/2 cup whole wheat flour
  • 1/3 cup canola oil
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Directions
  1. Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius. Spray a baking pan with non-stick spray.
  2. Using a food processor, shred potatoes, carrot and apple.
  3. Using a mixer, combine all ingredients.
  4. Pour batter into pan.
  5. Bake covered for 45 minutes.
  6. Baked uncovered for another 15 minutes.
  7. serves 4 -6
