Ingredients
  • 4 cups of sweet potatoes
  • 1 tablespoon lime juice
  • 3/4 cup sugar
  • 2 eggs
  • 2 tablespoons butter
  • 1/2 cup coconut milk
  • 1/4 cup of rum
  • grated rind of lime
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon powdered cinnamon
  • 1 tablespoon raisins

Directions
  1. To mashed potatoes, add sugar gradually and whole eggs, one at at time, mixing well after each addition.
  2. Mix in butter with a fork. Add milk. Blend well. mix in grated rind of lime and juice.
  3. Add rum. Mix well. Add salt, baking powder and cinnamon, sifted together. Mix.
  4. Add raisins
  5. Mix well. Pour this mixture into a greased pan and bake in a moderate oven (350 degrees) about 50 minutes, until done.
  6. Makes 8 servings.

I finally tried this today as a dessert with Sunday dinner. AWESOME!!! It was wonderful and will be something I definitely repeat in the future. It gets my 5 - thanks for a great new dessert.
