I love cake but I'm not so crazy over frosting...This is one of my favorites.

Ingredients
  • 1 box butter cake mix, pudding included
  • 2 tbls. key lime juice plus water to equal 1 cup
  • 1 stick butter, softened
  • 3 eggs
  • Filling
  • 1 14 oz. can sweetened condensed milk
  • 1/2 cup key lime juice
  • 2 cups whipping cream

Directions
  1. Preheat oven to 350
  2. Grease and flour 2- 8 or 9 inch round cake pans
  3. In mixing bowl, mix all cake ingredients at low speed until moistened
  4. Beat on high for 2 minutes
  5. Pour into cake pans
  6. Bake for 30-40 minutes for 8 inch pans and 20-30 for 9 inch pans
  7. Cool on racks for 10 minutes
  8. Remove from pans and cool completely
  9. In mixing bowl, add condensed milk, lime juice and mix well
  10. In another mixing bowl that has been chilled in the freezer along with beater blades, beat whipping cream until stiff
  11. Remove 1 cup of whipped cream and set aside
  12. Fold condensed milk mixture into remaining whipped cream until just blended
  13. Slice each layer in half horizontally, making 4 layers
  14. With one layer on serving plate, spread with 1/3 whipped cream filling
  15. Repeat 2 times
  16. Top with remaining cake layer
  17. With whipped cream set aside, decorate top of cake
  18. Refrigerate 2-3 hours before serving

You hid this one from me, didn't you? I know you did...other wise I would have been ALL over it...got the stuff...(well, I WILL have the stuff when I stop to get some butter on the way home from work tomorrow so I can make this tomorrow night)...and I will make it tomorrow night!
