Smoken Chili

- 2 tbsp olive oil shopping list
- 1 medium onion, chopped shopping list
- 4 cloves garlic, minced shopping list
- 2 stalks celery, chopped shopping list
- 1 green pepper, chopped shopping list

- 1 15oz can chili beans, undrained shopping list
- 1 15oz can dark red kidney beans, drained shopping list
- 1 15oz can light red kidney beans, drained shopping list
- 1 15oz can stewed tomatoes, undrained shopping list
- 1 15oz can diced tomatoes, undrained shopping list
- 2 cups beef broth, low sodium shopping list

- 1 lb ground beef, cooked and well drained shopping list
- 2 links smoked sausage shopping list

- 3 tbsp chili powder shopping list
- 1 tbsp cumin shopping list
- 1 tbsp sweet basil shopping list
- 1 tbsp cilantro shopping list
- 1 tbsp salt shopping list
- 1 tsp crushed red pepper shopping list

- 5 baby carrots shopping list
How to make it
- Crockpot on high - 2-3 hours
- Heat oil in a large skillet and saute the onion, garlic, celery and green pepper.
- Dump the veggies, beans and broth in the crockpot. Mix well.
- Add the tomatoes mix well.
- Halve and slice up the sausage. Add that and the crumbled ground beef to the pot. Mix well.
- Toss in the baby carrots. These are used to cut the acid. They can also be used as a game prize. You know like, the one to find and eat the first carrot doesn't have to do the dishes.
- Distribute the spices across the surface of the mixture. Mix really really really well.
- Go do something fun and come back for dinner.

I often cook chili and this with the sausage sounds wonderful I like the blend of herbs used in this recipe.
