Chicken Enchilada Ring

- 1 1/5 - 2 obs chicken breasts, tenderloins or thighs shopping list
- drizzle evoo shopping list
- 2 T margarine shopping list
- 2 t chili powder shopping list
- 1 t cumin shopping list
- 1 t garlic shopping list
- shake cayenne pepper shopping list
- dash hot sauce shopping list
- dash red pepper flakes shopping list
- 1 can chopped green chiles, undrained shopping list
- ¼ cup pitted ripe olives, chopped shopping list
- 1 cup shredded cheddar/Monterrey jack cheese shopping list
- ½ cup Kraft or Dukes real mayo shopping list
- 2 plum tomatoes shopping list
- 1 lime shopping list
- 2/3 cup finely crushed corn tortilla chips, divided shopping list
- 2 pkgs. crescent rolls shopping list
- 1-cup salsa shopping list
- 1-cup sour cream shopping list
How to make it
- Preheat oven to 375.
- Chop chicken and saute in evoo and butter, adding seasinings through red pepper flakes and the green chiles
- In a bowl, combine chicken mixture, olives, cheese and mayo
- Seed & chop 1 tomato.
- Slice lime in half.
- Reserve remaining lime for garnish.
- Add chopped tomato & juice from 1/2 the lime to chicken mixture.
- Reserve 2 TBS crushed chips; add remaining chips to chicken mixture & mix well.
- Sprinkle large grooved cutting board with remaining 2 T crushed chips
- Unroll crescent dough.
- Place dough, sticky side down, onto crushed chips; press down lightly so chips adhere to dough.
- Separate dough into triangles.
- Arrange triangles, chip side down, in a circle on round pizza stone or pizza pan with wide ends overlapping in the center & points toward outside. (There should be a 5-inch diameter opening in center.) Spoon chicken mixture evenly onto widest end of each triangle. Bring points of triangles up over filling & tuck under widest ends of dough at center of ring. (Filling will not be completely covered.)
- Bake 20-25 minutes or until golden brown.
- For garnish, cut remaining tomato into 8 wedges.
- Cut remaining lime into 4 slices; cut in half.
- Arrange between openings of ring.
- Serve with sour cream and salsa for dipping
