Ingredients
  • 1 1/5 - 2 obs chicken breasts, tenderloins or thighs
  • drizzle evoo
  • 2 T margarine
  • 2 t chili powder
  • 1 t cumin
  • 1 t garlic
  • shake cayenne pepper
  • dash hot sauce
  • dash red pepper flakes
  • 1 can chopped green chiles, undrained
  • ¼ cup pitted ripe olives, chopped
  • 1 cup shredded cheddar/Monterrey jack cheese
  • ½ cup Kraft or Dukes real mayo
  • 2 plum tomatoes
  • 1 lime
  • 2/3 cup finely crushed corn tortilla chips, divided
  • 2 pkgs. crescent rolls
  • 1-cup salsa
  • 1-cup sour cream

Directions
  1. Preheat oven to 375.
  2. Chop chicken and saute in evoo and butter, adding seasinings through red pepper flakes and the green chiles
  3. In a bowl, combine chicken mixture, olives, cheese and mayo
  4. Seed & chop 1 tomato.
  5. Slice lime in half.
  6. Reserve remaining lime for garnish.
  7. Add chopped tomato & juice from 1/2 the lime to chicken mixture.
  8. Reserve 2 TBS crushed chips; add remaining chips to chicken mixture & mix well.
  9. Sprinkle large grooved cutting board with remaining 2 T crushed chips
  10. Unroll crescent dough.
  11. Place dough, sticky side down, onto crushed chips; press down lightly so chips adhere to dough.
  12. Separate dough into triangles.
  13. Arrange triangles, chip side down, in a circle on round pizza stone or pizza pan with wide ends overlapping in the center & points toward outside. (There should be a 5-inch diameter opening in center.) Spoon chicken mixture evenly onto widest end of each triangle. Bring points of triangles up over filling & tuck under widest ends of dough at center of ring. (Filling will not be completely covered.)
  14. Bake 20-25 minutes or until golden brown.
  15. For garnish, cut remaining tomato into 8 wedges.
  16. Cut remaining lime into 4 slices; cut in half.
  17. Arrange between openings of ring.
  18. Serve with sour cream and salsa for dipping
