Tortellini In Spinach Cream Sauce Recipe

Ingredients

1 lb. frozen cheese tortellini

2 tbls. olive oil

1/2 cup onion, chopped

3 cloves of garlic, finely chopped

1 10 oz. pkg. frozen spinach, thawed and drained

1 cup diced tomatoes, fresh or canned

1 1/2 tsp. dried basil (1/4 cup fresh, finely chopped)

Salt and pepper to taste

1 cup whipping cream

1/4 cup Parmesan cheese

Additional Parmesan cheese to garnish

Directions

Cook tortellini as directed on package

Drain, set aside

Heat oil in skillet

Add onion and garlic and cook until tender

Add spinach, tomato, basil, salt and pepper and cook for 5 minutes or so, stirring occasionally

Stir in whipping cream and cheese

Cook until just coming to boil

Reduce heat to low and add tortellini

Heat thoroughly

Garnish with additional Parmesan cheese
