Tortellini In Spinach Cream Sauce

- 1 lb. frozen cheese tortellini shopping list
- 2 tbls. olive oil shopping list
- 1/2 cup onion, chopped shopping list
- 3 cloves of garlic, finely chopped shopping list
- 1 10 oz. pkg. frozen spinach, thawed and drained shopping list
- 1 cup diced tomatoes, fresh or canned shopping list
- 1 1/2 tsp. dried basil (1/4 cup fresh, finely chopped) shopping list
- salt and pepper to taste shopping list
- 1 cup whipping cream shopping list
- 1/4 cup parmesan cheese shopping list
- Additional parmesan cheese to garnish shopping list
How to make it
- Cook tortellini as directed on package
- Drain, set aside
- Heat oil in skillet
- Add onion and garlic and cook until tender
- Add spinach, tomato, basil, salt and pepper and cook for 5 minutes or so, stirring occasionally
- Stir in whipping cream and cheese
- Cook until just coming to boil
- Reduce heat to low and add tortellini
- Heat thoroughly
- Garnish with additional Parmesan cheese
