How to make it

  • Preheat oven to 350
  • Drain pineapple, reserving syrup for glaze
  • In mixing bowl, sift flour, soda and salt
  • In another mixing bowl, cream together sugar, cream cheese, vanilla and egg
  • Add dry ingredients, alternately with sour cream and mix well
  • Fold in pineapple and combine
  • Heavily grease muffin tins
  • Divide almonds among tins
  • Add muffin batter to tins
  • Bake 20 minutes, then check
  • Remove to rack after cooling for 10 minutes
  • When completely cool, glaze muffins
  • Glaze
  • Combine all ingredients and stir until blended

    Oh yeah. It didn't take the whole 30-40 minutes to cook. They were only in for 20 minutes and almost were overdone. I'd say check after 18 minutes.

    Made these this morning. The recipe call for sugar in the instructions, but none in the ingredients listed. I added 1 cup of white sugar. Didn't have almonds so I made Pineapple Pecan Muffins. Delicious :)
