Ingredients
- 1 20 oz. can crushed pineapple shopping list
- 1/2 cup slivered almonds shopping list
- 2 cups flour shopping list
- 1 cup sugar shopping list
- 1 tsp. baking soda shopping list
- 1 tsp. salt shopping list
- 1 3 0z. pkg. cream cheese, softened shopping list
- 2 tsp. vanilla shopping list
- 1 egg shopping list
- 1/2 cup sour cream shopping list
- glaze shopping list
- 1 tbls. butter, softened shopping list
- 1 cup powdered sugar, sifted shopping list
- 1 tbls. syrup from pineapple shopping list
How to make it
- Preheat oven to 350
- Drain pineapple, reserving syrup for glaze
- In mixing bowl, sift flour, soda and salt
- In another mixing bowl, cream together sugar, cream cheese, vanilla and egg
- Add dry ingredients, alternately with sour cream and mix well
- Fold in pineapple and combine
- Heavily grease muffin tins
- Divide almonds among tins
- Add muffin batter to tins
- Bake 20 minutes, then check
- Remove to rack after cooling for 10 minutes
- When completely cool, glaze muffins
- Glaze
- Combine all ingredients and stir until blended
