A Pocketful Of Greens And Sardines Recipe

Ingredients
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 3 tablespoons crumbled feta cheese
  • 1/4 teaspoon oregano
  • 1/4 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 3 cups loosely packed torn spinach leaves
  • 1 small tomato sliced
  • 2 slices red onion separated into rings
  • 2 pocket breads halved
  • 1 can sardines in oil drained

Directions
  1. In a small bowl combine oil, vinegar, cheese, oregano, salt and pepper then whisk to blend.
  2. Toss spinach, tomato and onion with dressing.
  3. Fill breads with spinach mixture and sardines, dividing equally.

I've been looking for new ways to fix sardines, because they are just so healthy and cheap (huge Omega-3 source, says my holistic practitioner). This sounds awesomely delicious! Think I'm gonna try it with kale instead of spinach -- because that's what I have in the house, and because I just love kale. Thanks for this idea!
