I find coffee cake comes in handy for serving either after a meal or when a friend pops in for a cup of coffee or tea. If you want to omit the walnuts or raisins it still tastes delicious.

Ingredients
  • 1/2 cup butter or margarine at room temperature
  • 1 cup white sugar
  • 2 eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract or I sometimes use almond extract but just a dash because it has a more potent flavor compared to vanilla.
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup raisins
  • CRUMBLE TOPPING:
  • 1/4 cup sifted all-purpose flour (sift before measuring)
  • 1 teaspoon cinnamon
  • 1/4 cup butter, room temperature
  • 1/4 cup walnuts
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/4 cup raisins

Directions
  1. Cream together butter/margarine and sugar.
  2. Beat in eggs until batter is smooth.
  3. Add sour cream and vanilla and mix well.
  4. Sift together flour, baking powder, baking soda, salt and raisins.
  5. Mix dry ingredients into egg mixture and blend well.
  6. Note: Now, this is where I vary. Sometimes I sprinkle 1/2 of the topping on the bottom of the greased and floured bundt pan and then gently pour the batter over top and sometimes I pour the batter in first and sprinkle 1/2 of the topping when I have finished pouring the batter in. It's up to you.
  7. Pour half of the batter in a lightly greased and floured springform, or bundt pan. Sprinkle with half of topping mixture then add remaining batter and the rest of the topping.
  8. Bake at 350 F (175 C) for 45-60 minutes.
  9. Options:
  10. Fresh peach, pear or mango slices are a nice addition to this recipe. Add a few slices with the first half of the topping, then place the remaining slices into the batter on the top and sprinkle with remaining topping.
