Ingredients

How to make it

  • Scrub potatoes, cut into large chunks into bowl of ice cold water
  • Chop onion and pepper
  • Make sauce (all ingredients except salt and pepper)
  • Tear off extra large sheet of aluminum foil, place on counter, shiny side up.
  • Drain water from potatoes
  • Mix potatoes, onions, and peppers with sauce in large bowl until well coated
  • Pour into single layer on foil
  • Spinkle with a couple pinches kosher salt, and several grinds of fresh black pepper
  • Bring sides up to make packet
  • Grill on high, 20 minutes
  • Turn down to medium, grill 45 minutes more
  • Turn over halfway through cooking time

    I make potatoes like this all the time, they're wonderful! I really like the sound of the lemon juice/zest and the bay leaf. To cut down time, I usually microwave the potatoes for a few minutes, and heavy duty foil makes it so easy for flipping them on the grill. I'm definitely going to try out your sauce! Thanks for sharing :) ^5
