Hush Puppies

My favorite hush puppy! I fry these outside using my turkey fryer in a short pot. Great with 24 hour slaw and fresh caught home smoked fish Grill up some oysters, chill the beer and light the tiki torches!
Ingredients
- 2 cups of white water ground corn meal shopping list
- 1 tablespoon of flour shopping list
- 1 teaspoon of baking powder shopping list
- 1/2 teaspoon of baking soda shopping list
- 1 teaspoon of salt shopping list
- 1 egg shopping list
- 3 tablespoons of chopped (fine) yellow onion shopping list
- 1 tablespoon of finely minced jalapeno, seeded and deveined shopping list
- 2 tablespoons of plum tomato flesh chopped in a fine dice-no seeds and as dry as you can make them shopping list
- 1 cup of buttermilk shopping list
How to make it
- Mix all the dry ingredients.
- Add chopped onion, jalapeno and tomato bits.
- Then add the milk and beaten egg.
- Drop by spoonful into deep hot oil (375).
- Turn over and allow to cook until lightly brown.
- Drain on plain brown paper bags.
- Serve at once.
