Asparagus and Mushroom Frittata

- 2 tablespoons vegetable oil shopping list
- 1 sausage link cut into pieces shopping list
- 1/4 cup white onion chopped shopping list
- 1/8 teaspoon minced garlic shopping list
- 1/4 cup asparagus cut into 1" pieces shopping list
- 1/4 cup diced mushrooms shopping list
- 1/2 cup hash browns shopping list
- 2 eggs shopping list
- 1 tablespoon milk shopping list
- 1/8 teaspoon freshly ground black pepper shopping list
- 2 tablespoons parmesan cheese shopping list
- salsa shopping list
How to make it
- Heat oil in a small skillet on medium high heat.
- Cook sausage link pieces turning occasionally until browned on all sides.
- Add onion, garlic, asparagus, mushrooms and hash browns then sauté 5 minutes.
- In small bowl beat eggs, milk and pepper then add to skillet and reduce heat to low and cover.
- Cook 10 minutes or until eggs are firm then top with cheese and cut into wedges and serve.
- Serve with salsa.
