How to make it

  • Cake:
  • Preheat over 350F
  • Grease 6x2 round cake pans or springform pans
  • Mix tsp of flour and tsp of cocoa powder; dust pans
  • Set aside
  • In a med. bowl mix flour, cocoa powder, baking powder, baking soda, cinnamon, and salt; set aside
  • In a lrg bowel mix butter at med- high setting for 30 seconds
  • Add sugar, beat until smooth and fluffy
  • Mix in eggs, vanilla, and sour cream untill smooth
  • Slowly add in flour mixture.
  • Pour batter into pans evenly
  • Bake 20-26 minutes; until top springs back when lightly touched and the edges begin to pull away from the pan.
  • Cool in pans on wire racks 10 minutes
  • Remove from pan to cool on racks
  • Cherry Fosting:
  • In lrg mixing bowl combine sour cream, whipping cream, powdered sugar, and cherry juice. Beat on med-high until fluffy.
  • Chocolate Cover Cherries
  • Pat dry drained cherries w/ stems w/ paper towel
  • In small micro-wave safe bowel, melt semi-sweet and shortening
  • 50% power for 1.5 - 2 minutes
  • Dip cherries in chocolate and place on waxed papered cook tray
  • Place in fridge until set
  • Layer cake then fosting as many layers as you wish; dont fost side of the cake
  • Top with chocolate covered cherries
