Ingredients

1 1/2 tbs. oil

2 onions chopped

1 stalk celery chopped

1 red bell pepper seeded and diced

3 cloves garlic minced

3 1/2 cups vegtable stock

1 teapoon thyme

1 bay leaf

2 cups frozen corn kernels

1 potatoe peeled and diced

2 tbs, corn starch

12 oz. evaporated skimmed milk

Salt and pepper to taste

1 large covered Pot:

Directions

Heat oil over low heat

Add onions and cook 5 minutes or untill translucent

Add celery red pepper Garllic and cumin stir 2-3 minutes

Add stock Thyme nd Bay Leaf bring to boil

Reduce to a simmer and cook 10 minutes

Add Corn and Potatoe continue to simmer 5-10 minutes

or untill veggies are tender

Combined cornstarch and Milk

Blend into soup

Season with salt and pepper
