Candied Pink Grapefruit Peel

- peel of one large pink grapefruit shopping list
- 1 c water shopping list
- 1 c white sugar shopping list
- more sugar for coating shopping list
How to make it
- Prepare a simple syrup of the water and 1 c sugar: combine, simmer until the sugar is dissolved, and boil for another 5 m.
- Remove peel from grapefruit in large pieces--5 or 6 is good.
- Cook the grapefruit peel in simmering water for 10 m.
- Changing the water, do this two more times.
- Remove some moisture from the grapefruit peel with paper towels.
- Cut the peel into slender strips, about 2"x1/4".
- Add to the simple syrup and simmer for 25 m, or until it is translucent and an astonishing deep coral pink..
- Remove and dry overnight on cookie racks.
- Toss in a bowl with additional white sugar to coat.
- Store in a jar in a dark cool place--I keep mine in the freezer.
