How to make it

  • Prepare a simple syrup of the water and 1 c sugar: combine, simmer until the sugar is dissolved, and boil for another 5 m.
  • Remove peel from grapefruit in large pieces--5 or 6 is good.
  • Cook the grapefruit peel in simmering water for 10 m.
  • Changing the water, do this two more times.
  • Remove some moisture from the grapefruit peel with paper towels.
  • Cut the peel into slender strips, about 2"x1/4".
  • Add to the simple syrup and simmer for 25 m, or until it is translucent and an astonishing deep coral pink..
  • Remove and dry overnight on cookie racks.
  • Toss in a bowl with additional white sugar to coat.
  • Store in a jar in a dark cool place--I keep mine in the freezer.
