Candied Pink Grapefruit Peel Recipe

Ingredients

peel of one large pink grapefruit

1 c water

1 c white sugar

more sugar for coating

Directions

Prepare a simple syrup of the water and 1 c sugar: combine, simmer until the sugar is dissolved, and boil for another 5 m.

Remove peel from grapefruit in large pieces--5 or 6 is good.

Cook the grapefruit peel in simmering water for 10 m.

Changing the water, do this two more times.

Remove some moisture from the grapefruit peel with paper towels.

Cut the peel into slender strips, about 2"x1/4".

Add to the simple syrup and simmer for 25 m, or until it is translucent and an astonishing deep coral pink..

Remove and dry overnight on cookie racks.

Toss in a bowl with additional white sugar to coat.

Store in a jar in a dark cool place--I keep mine in the freezer.
