  • Large poly-woven bag for gathering (see Reuse Recycle Feed Bags)
  • 450g (1lb) elderberries, stripped from stems (you can strip the berries right into the polyethylene feed bag, but you will want to put newspaper under the bag, because it allows seepage.)
  • 225g (8oz) cooking apples, peeled and chopped
  • 150ml (1/4 pt) water
  • juice of 2 lemons
  • 2 sprigs of lemon balm (if available)
  • 675g (1 1/2 lb) sugar

Directions
  1. First you need to find the berries:
  2. It is easier if you drive a car, but you dont have to drive. In the month of September drive your car on a highway that runs parallel with a set of railroad tracks, or better yet a trail on a berm that was old railroad tracks. Look in the land area along the ditch of the highway and the berm of the RR tracks. The elderberry bush with look like a large burgandy colored mass. And then about a 1/4 mile up you will begin to see 3 or 4 large burgandy masses, and then you need to park to get a closer look. Elderberry also frequently grows along unmowed land adjacent to industrial parks in full sunlight. you can identify the plants in the spring by their large multi-flowered white umbels. The plant fully grown is 8 feet, so use caution when picking the berries while standing on a trail. if the top of the plant is at eye level you have a five foot drop to the bottom of the ditch. Watch your footing and only pick those berries you can easily reach. Remember there are more plants a little further up.
  3. Put all the ingredients into a pan and simmer until a small quantity, put on a plate, wrinkles when cold. Remove balm. Pour into hot sterized jars and cover.

Great recipe! Also make the best wine!! And if you concentrate the juice, it is one of the best things for colds and flu and is so easy to give kids. They also come in a red variety but they shouldn't be used because they can cause intestinal upsets. Thanks for the great post.
