Apple Bacon Tomato soup

- 5 slices bacon shopping list
- 1Tbs olive oil shopping list
- 1/2 white onion,choped shopping list
- 2tsp garlic,minced shopping list
- 2c beef stock shopping list
- 1 (15.5oz) can pinto beans shopping list
- 1(14.5oz) can Italian-style stewed tomatoes shopping list
- 2 stalks celery,chopped shopping list
- 1 bay leaf shopping list
- 1 med. apple.thinly sliced shopping list
- 1/2c red wine shopping list
- salt and pepper to taste shopping list
How to make it
- Place bacon in a large,deep skillet. Cook over med-high heat until evenly brown. Drain,coarsely chop and set aside.
- Heat olive oil in a large saucepan over med. heat and saute white onion and garlic 3 to 5 mins.,or till tender. Stir in beef stock,pinto beans,tomatoes,celery and bay leaf. Bring mixture to a boil. Reduce heat and simmer.
- In small saucepan over med. heat,cook and stir the apple in red wine until soft.
- Mix bacon,apple and remaining red wine into the soup mixture. Season with salt and pepper. Continue to simmer,stirring occasionally till well blended.
