Sweet Potato Pie

- 4 Tbs (1/2 stick) unsalted butter, softened shopping list
- 1/3 - 1/2 cup sugar shopping list
- 1 1/2 cups mashed sweet potatoes, fresh or canned unsweetened, well drained shopping list
- 2 large eggs, at room temperature shopping list
- 1/2 cup milk shopping list
- 1 tablespoon pure vanilla extract shopping list
- pinch of salt shopping list
How to make it
- If using fresh sweet potatoes: lightly coat the skins with vegetable oil and bake at 250F for 2hrs.
- Preheat the oven to 400F.
- Mix all the ingredients together in a bowl.
- Pour the filling into the chilled pie shell and bake for 20min at 400F.
- Lower the oven temperature to 325F and bake for 30 to 35min more, or until the tip of a sharp knife inserted in the center comes out clean.
- Remove the pie from the oven to a wire rack and cool for 30min.
