Sweet Potato Pie Recipe

Ingredients

4 Tbs (1/2 stick) unsalted butter, softened

1/3 - 1/2 cup sugar

1 1/2 cups mashed sweet potatoes, fresh or canned unsweetened, well drained

2 large eggs, at room temperature

1/2 cup milk

1 tablespoon pure vanilla extract

pinch of salt

Directions

If using fresh sweet potatoes: lightly coat the skins with vegetable oil and bake at 250F for 2hrs.

Preheat the oven to 400F.

Mix all the ingredients together in a bowl.

Pour the filling into the chilled pie shell and bake for 20min at 400F.

Lower the oven temperature to 325F and bake for 30 to 35min more, or until the tip of a sharp knife inserted in the center comes out clean.

Remove the pie from the oven to a wire rack and cool for 30min.

Hi there:-)) Ive heard so much about this recipe, usually in an old blues song, a reference to 'mamas ole sweet potato pie' but have never taken the time to make it, really simple but I bet it tastes great, cheers for sharing!

I assume the butter is there for the flavor, possibly adding some moisture. I doubt it would taste as good without it, though removing it shouldn't cause any trouble in the baking process. You might, in that case, want to add some extra milk to make up the moisture content.
