How to make it

  • If using fresh sweet potatoes: lightly coat the skins with vegetable oil and bake at 250F for 2hrs.
  • Preheat the oven to 400F.
  • Mix all the ingredients together in a bowl.
  • Pour the filling into the chilled pie shell and bake for 20min at 400F.
  • Lower the oven temperature to 325F and bake for 30 to 35min more, or until the tip of a sharp knife inserted in the center comes out clean.
  • Remove the pie from the oven to a wire rack and cool for 30min.

I assume the butter is there for the flavor, possibly adding some moisture. I doubt it would taste as good without it, though removing it shouldn't cause any trouble in the baking process. You might, in that case, want to add some extra milk to make up the moisture content.
