Greek Chiken And Orzo Recipe
A delicious chiken and orzo skillet meal. Flavors from Greece and very delicious. Vegetarians can substitute veggie chicken strips for the real chicken! Kids enjoy it too!

Ingredients
  • 1 chicken, cut into pieces (I use veggie chicken strips)
  • 3 cups orzo, cooked
  • 1 onion, chopped
  • 1 - 15 ounce can tomato sauce
  • 4 Tbsp. butter
  • 1/4 tsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp oregeno leaves, crushed
  • Parmesan cheese, grated

Directions
  1. In a large, deep, pan brown chicken in butter for 15 minutes.
  2. Add onion and cook an additional 10 minutes.
  3. Stir in the can of tomato sauce, 1/2 a can of water and the spices. Simmer uncovered for about 15 minutes.
  4. Stir in precooked orzo and simmer 10-15 minutes uncovered until the sauce thickens. (You may add more tomato sauce if the fluid absorbs into the orzo).
  5. Sprinkle with parmesan cheese and serve.
