Stuffed Mexican Meatloaf

- 2 pounds lean ground beef shopping list
- 8 ounces tomato sauce shopping list
- 1/2 cup plus 2 tablespoons taco seasoning mix shopping list
- 1/3 cup chopped green bell pepper shopping list
- 1/3 cup finely chopped white onion shopping list
- 1-1/2 slices white bread torn into small pieces shopping list
- 1 large egg slightly beaten shopping list
- 2 cups shredded cheddar cheese shopping list
- 1/2 cup sour cream shopping list
- 3 cheddar cheese slices shopping list
How to make it
- Combine beef, tomato sauce, taco seasoning, green pepper, onion, bread crumbs and egg.
- Mix until all ingredients are well combined.
- Combine shredded cheese and sour cream.
- Place half the meat mixture in a loaf pan and make deep well the length of loaf.
- Place cheese mixture in well then place remaining meat mixture on top and seal well.
- Bake at 375 for 2 hours then pour off drippings.
- Top meatloaf with overlapping cheese triangles then allow to stand 10 minutes before slicing.
