Stuffed Mexican Meatloaf Recipe
STUFFED MEXICAN MEATLOAF This recipe came from an estate sale. I obtained it when I purchased the family collection from the Campbell Estate in Terrell, Texas in 1991.

Ingredients
  • 2 pounds lean ground beef
  • 8 ounces tomato sauce
  • 1/2 cup plus 2 tablespoons taco seasoning mix
  • 1/3 cup chopped green bell pepper
  • 1/3 cup finely chopped white onion
  • 1-1/2 slices white bread torn into small pieces
  • 1 large egg slightly beaten
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 3 cheddar cheese slices

Directions
  1. Combine beef, tomato sauce, taco seasoning, green pepper, onion, bread crumbs and egg.
  2. Mix until all ingredients are well combined.
  3. Combine shredded cheese and sour cream.
  4. Place half the meat mixture in a loaf pan and make deep well the length of loaf.
  5. Place cheese mixture in well then place remaining meat mixture on top and seal well.
  6. Bake at 375 for 2 hours then pour off drippings.
  7. Top meatloaf with overlapping cheese triangles then allow to stand 10 minutes before slicing.
