DRUNKEN CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hayes Estate in Mesquite, Texas in 1989.

Ingredients
  • 1 broiler chicken cut into serving pieces
  • 1/4 cup corn oil
  • 1-1/4 teaspoons salt
  • 1 teaspoon paprika
  • 3/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon crushed oregano
  • 1/2 teaspoon cumin seed
  • 1/4 teaspoon garlic powder
  • 1 cube chicken bouillon crushed
  • 16 ounce can tomatoes chopped
  • 1 large white onion sliced
  • 5 medium zucchini sliced
  • 1 cup red burgundy wine

Directions
  1. Heat corn oil in Dutch oven over medium heat then add chicken and brown well on all sides.
  2. Sprinkle in salt, paprika, black pepper, oregano, cumin, garlic powder and bouillon.
  3. Reduce heat to medium low then add tomatoes, onion, zucchini and wine.
  4. Cook covered for 30 minutes then uncover and continue cooking another 15 minutes.
