How to make it

  • If using dehydrated mushrooms, rehydrate the night before with water. Drain the water (but save in a seperate container for later use - great for stocks!)
  • Sautee the mushrooms in a little butter and oil, salt, pepper, garlic shallots,and herbs till cooked through and soft.
  • Deglaze with wine and lemon juice.
  • When wine has almost completely reduced, add cream.
  • Reduce by half. (The web site doesn't have an approximate time for how long this should take)
  • Season and set aside.

    This sounds like it would be fantastic with some sirloin tips. Love the fragrant herbs and garlic those morels are my favorite mushrooms. Added this to Fungus Among Us.
