Ingredients
  • 3 Cups Milk
  • 1 Cup Semolina
  • 2 Fresh Eggs,beaten very well
  • 1 Tablespoons Butter
  • 1 teaspoon Salt
  • Pinch of Pepper
  • 1/4 Cup Butter
  • 1 Cup Parmesan Cheese,grated

Directions
  1. Scald milk in saucepan.
  2. Reduce heat and slowly sprinkle the semolina into the hot milk,stir all the time.
  3. Cook,stir constantly,until very thick,about 8 minutes.(Your spoon should stand upright in mixture)
  4. Stir in eggs,1 tablespoon butter,salt,pepper,beat until smooth.
  5. Spread mixture into a greased pan,13"x9" will do quite nicely.
  6. Cool,cover and refrigerate for about 4 hours.
  7. Cut semolina mixture with a circle cookie cutter(about 1-1/2")dipped in water to keep from sticking.
  8. Place the little cakes,overlapping,in a ungreased dish.
  9. Dot with 1/4 Cup Butter,sprinkle with the Parmesan Cheese.
  10. Bake in a 350 degree oven until crisp and brown,about 35 minutes.

This reminds me of spoon bread. Sounds great. Of course, you can't go wrong with parmesan cheese!
