How to make it

  • Scald milk in saucepan.
  • Reduce heat and slowly sprinkle the semolina into the hot milk,stir all the time.
  • Cook,stir constantly,until very thick,about 8 minutes.(Your spoon should stand upright in mixture)
  • Stir in eggs,1 tablespoon butter,salt,pepper,beat until smooth.
  • Spread mixture into a greased pan,13"x9" will do quite nicely.
  • Cool,cover and refrigerate for about 4 hours.
  • Cut semolina mixture with a circle cookie cutter(about 1-1/2")dipped in water to keep from sticking.
  • Place the little cakes,overlapping,in a ungreased dish.
  • Dot with 1/4 Cup Butter,sprinkle with the Parmesan Cheese.
  • Bake in a 350 degree oven until crisp and brown,about 35 minutes.
