This recipe is from Carla A. at allrecipes and Carla originally gleaned it from cakerecipe.com. It's very easy and doesn't even bake all that long for a fruitcake! Makes one 9x5" loaf.

Ingredients
  • 3/4 cup all-purpose flour
  • 3/4 cup white sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 cups Brazil nuts
  • 1 pound pitted dates
  • 1 cup maraschino cherries, drained
  • 3 eggs
  • 1 teaspoon vanilla extract

Directions
  1. Preheat oven to 300 degrees F.(150 degrees C).
  2. Grease one 9x5" loaf pan.
  3. Sift the flour, sugar, baking powder and salt together,
  4. Mix in the nuts, dates and cherries.
  5. Beat the eggs until foamy, add vanilla and the flour mixture.
  6. Stir until just combined and pour into prepared pan.
  7. Bake for 1 hour and 45 minutes.
  8. Remove from oven.
  9. Store in refrigerator, wrapped in foil.

I feel so bad I just am not a fruit cake fan. But it does look good....:)


Now this one doesn't have all the dried fruit in it...do you suppose this could be the one to convert me?!?!? Keep trying, LA - I love looking at all the variations!

This sounds perfect! I have been looking for a recipe similiar to this for years. I hate the traditional fruitcake but had something similiar to this with nothing but nuts in it. It was so delicious, I never got the recipe so thanks a million.
