Vanilla sugar can be bought in baking section. I beleive Dr Oetker brand. I make my own by putting a cut vanilla bean in a small cannister of sugar for a few days etc..
Solo brand makes a canned poppyseed filling, avialable in most supermarkeerts.
But I can post a simple filling also. They are not hard at all

Here is an easy filling:
2 c Milk, scalded
1 lb Ground poppyseeds( note grind in your coffee mill or food procesor! )
1 1/2 c Sugar
to taste: a little lemon juice, cinnamon, a bit of softened butter
Mix everything together and let sit until the poppyseeds have been fully absorbed in the liquid.
One may also cook this a bit till thickend and remove from heat and let cool. it should be a fairly thick but spreadable paste consistency.
Let sit till cooled
