Roman Spaghetti Salad

- 3 large garlic cloves, minced shopping list
- 5 Tbsp olive oil shopping list
- A handful of fresh mint leaves (spearmint is best), minced shopping list
- 5 Tbsp fresh orange juice shopping list
- 12 black olives shopping list
- 6 anchovy fillets shopping list
- 1 small jar marinated mushrooms in oil shopping list
- salt to taste shopping list
- 1 1/2 lbs. spaghetti shopping list
How to make it
- Fry garlic gently in the oil until golden. Add the mint and take off the heat. Pour in the orange juice. Chop the olives and anchovies roughly and stir into the pan, then add the mushrooms. Season with salt and mix all together.
- Cook the spaghetti in lots of boiling water, till al dente. Drain and pour onto a large platter. Mix in the sauce and spread out to cool. When cool, transfer to a nice rustic bowl to serve outside :)

Oh, this is a terrific combination of flavors. I always flavor my olives with orange or lemon rind and adding anchovies to make a pasta dressing...yummy. Can't wait to try this. Thank you so much for the post.
