How to make it

  • season ribs with salt and peeper
  • sear short ribs on all sides till nicely browned
  • remove to roasting pan
  • deglaze pan with port
  • add onion chunks and carrot chunks to roasting pan
  • add thyme to port wine then pour over short ribs
  • add beef stock place in a 350 degree oven for 2 1/2 - 3 hrs.
  • for cauliflower
  • cut cauliflower into florettes place in a sauce pan
  • cover with milk bring to boil and cook until very tender
  • drain milk
  • add butter salt and pepper to taste and mash
  • when short ribs are done remove to plate put roasting pan on stove top and reduce sauce by half then strain
  • to serve
  • place cauliflower mash in center of a plate lean 2 short ribs against it
  • laddle sauce around outside of plate sprinkle with some fresh chives
  • enjoy
