How to make it

  • In a large bowl, combine almond flour, salt, baking soda, cinnamon and nutmeg
  • In a separate bowl, mix together eggs, agave and oil
  • Stir carrots, raisins and walnuts into wet ingredients
  • Stir wet ingredients into dry
  • Place batter into 2 well greased, round 9 Inch cake pans
  • Bake at 325 degrees for 35 minutes
  • Cool to room temperature and spread with coconut cream frosting
  • Serve

    I believe that flax meal can replace the eggs in order for their to be some elasticity.

    to be fair, they said it was vegan "Frosting". As for making a cake without ANY dairy or eggs... I'm not even sure that's possible in a gluten free recipe. Reason being that because you no longer have gluten in the flour to give the cake its elasticity, you need to use eggs as a substitute for the gluten otherwise your cake will fall flat like cardboard. Probably taste as good as cardbaord too, lol.

    I was so excited to find this recipe, until I read down and saw 5 EGGS!!! It is beyond me how all of these websites can say that they are offering Vegan food. Eggs are "chicken Abortions", so they are definitely not a plant source. Please take Dairy and Eggs into account before you call Recipes VEGAN!!!!
