Sauteed Spinich With Cranberries Recipe
Fresh baby spinach leaves are added to lightly sauted onions and garlic until they just wilt, then dried cranberries and toasted pine nuts are tossed in for a yummy, crunchy, healthy side dish.

Ingredients
  • Large bag fresh baby spinach, washed
  • 1 med onion, finely sliced
  • 3-4 cloves garlic, minced
  • 1 c dried cranberries
  • 1/2 c toasted pine nuts
  • Salt and cayenne to taste
  • Olive oil

Directions
  1. In medium skillet, saute onions until translucent. Add minced garlic and cook until garlic is done, but not brown.
  2. Add spinach and stir until just wilted. Season to taste.
  3. Add dried cranberries and pine nuts. Stir and serve warm.

Pine nuts can be expensisve--at least around here--so I substituted sunflower seeds. I wonder if a dash of vinegar on the top of each serving would be good? Wish I'd thought to try that when I made it.


This sounds great. Thanks labover47 for the substitution idea. I'm going to use sunflower seeds, too.
