Fresh baby spinach leaves are added to lightly sauted onions and garlic until they just wilt, then dried cranberries and toasted pine nuts are tossed in for a yummy, crunchy, healthy side dish.

Pine nuts can be expensisve--at least around here--so I substituted sunflower seeds. I wonder if a dash of vinegar on the top of each serving would be good? Wish I'd thought to try that when I made it.
