Sauteed Spinich With Cranberries

- Large bag fresh baby spinach, washed shopping list
- 1 med onion, finely sliced shopping list
- 3-4 cloves garlic, minced shopping list
- 1 c dried cranberries shopping list
- 1/2 c toasted pine nuts shopping list
- salt and cayenne to taste shopping list
- olive oil shopping list
How to make it
- In medium skillet, saute onions until translucent. Add minced garlic and cook until garlic is done, but not brown.
- Add spinach and stir until just wilted. Season to taste.
- Add dried cranberries and pine nuts. Stir and serve warm.

Pine nuts can be expensisve--at least around here--so I substituted sunflower seeds. I wonder if a dash of vinegar on the top of each serving would be good? Wish I'd thought to try that when I made it.
