Delmonicos  Baked Eggplant Creole Recipe
A classic creole dish from the original Delmonico restaurant. I made this and it was very easy and delcious.

Ingredients
  • 2 egglpants diced
  • 1 onion
  • 1 cup raw peeled shrimp
  • 1 stick celery
  • 1/2 cup butter or oil
  • Creole seasoning to taste
  • breadcrumbs
  • salt and black pepper to taste

Directions
  1. Cover eggplant with water and boil till soft but not mushy.
  2. Drain very well.
  3. Saute the chopped onion and celery in the butter or oil, add chopped shrimp and cook a bit longer.
  4. Combine mixture with the eggplant , season to taste with creole spices and place in a casserole dish and sprinkle with breadcrumbs and some salt and pepper
  5. Bake 350F about 30 minutes
