The Original Chorizo Egg Burrito

- pork or beef chorizo shopping list
- 3 large eggs shopping list
- shredded cheddar cheese shopping list
- OPTIONAL INGREDIENTS shopping list
- sour cream shopping list
- beans- whole or refried (heated) shopping list
- mushrooms shopping list
- sweet or hot peppers shopping list
- olives shopping list
How to make it
- Heat frying pan to a medium-high temperature
- Chop optional ingredients you want to add.
- Squeeze about 2"-3" of chorizo into hot pan, stirring so it cooks evenly.
- Move chorizo to the side of the pan, then press all the grease out of it with the back of your spoon or spatula. You'll have to do this a couple of times to get most of it out.
- Then you put it on a paper plate (you can toss it out when done), and soak the rest of the grease with a paper towel till it's dry.
- Return chorizo to hot pan and add eggs & shredded cheese & any optional ingredients (exept beans). Stir till blended and cooked the way you like 'em done.
- Heat tortillas in the microwave.
- Divide eggs evenly and place on tortilla with your optional ingredients.
- Roll up and serve.
- (if you need to eat on the run, put burrito in a plastic sandwich bag so it doesn't drip all over your nice clean clothes-- or the baby-- or your newspaper)
