Zucchini Parmesan Sticks Recipe

Ingredients

2 small zucchini

1 teaspoon extra virgin olive oil

salt, to taste

pepper, to taste

2 tablespoons fresh grated Parmesan cheese

Directions

Cut zucchini in half lengthwise, and then cut each half lengthwise again, yielding 4 sticks per zucchini.

Cut the sticks in half crosswise, yielding 8 sticks per zucchini.

In a large frying pan, heat the olive oil and add the zucchini sticks to the pan; cook for 4 minutes, stirring occasionally.

Sprinkle zucchini with salt and pepper; continue to cook, stirring occasionally, until zucchini is tender but still slightly crisp, usually about 4 to 5 minutes.

Remove pan from heat and sprinkle zucchini with Parmesan cheese; cover pan and allow cheese to set on zucchini until it is melted, about a minute or less.

Serve immediately.
