Bacon Onion And Tomato Pizza Recipe
BACON ONION AND TOMATO PIZZA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Fargo Estate in Denton, Texas in 1986.

Ingredients
  • 1 tablespoon olive oil plus about 1 tablespoon more for brushing on pitas
  • 2 cups sliced white onions
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 tablespoons brown sugar
  • 4 Greek style pita breads
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 cup mozzarella cheese
  • 2 large tomatoes washed and sliced 1/4" thick
  • 1-1/2 cups sliced fresh spinach
  • 8 slices cooked bacon each slice cut in half and divided
  • 1 cup fontina cheese shredded

Directions
  1. Preheat oven to 400 then heat 1 tablespoon olive oil over medium heat.
  2. Add sliced onions and season with salt and pepper then sauté onions 5 minutes.
  3. Sprinkle with brown sugar and continue cooking until onions turn a golden brown.
  4. Remove them from heat and set aside.
  5. Place pitas on a baking sheet and brush each with olive oil then sprinkle with garlic powder.
  6. Sprinkle Italian seasoning and mozzarella over top then top with a portion of the onions.
  7. Arrange tomato slices on the pita and garnish with spinach in the center.
  8. Arrange four bacon slices on top of each pizza then bake 10 minutes.
  9. Remove from oven and sprinkle each with 3 tablespoons of the fontina cheese.
  10. Return to oven and bake until cheese melts then remove from oven and serve.

Hi Chef, I haven't made individual pizzas for a while and these sound great. I have everything in the cupboard but pita. I wonder if I should try flour tortillas?
It seems that all your estates sale recipes are tried and true. "Not a fart in the carload" as they used to say. (Pardon my coarseness.) Every one that I've made is very good.
