How to make it

  • Soak the peas as directed on the package; drain.
  • In a deep pot, combine the peas and water.
  • Cover and simmer 2 1.2 to 3 hours until the peas are tender; drain.
  • In a medium bowl, combine the cooked peas and the remaining ingredients.
  • Cover and refrigerate for 2 to 3 hours; stirring occasionally.
  • Makes 8 3/4-cup servings.

    I'm with Juels - love chickpeas, and love the flavors in this salad...great idea for the summer grilling season, which I am looking forward to with great anticipation after our bitterly cold winter!
