Spinach And Muenster Quiche Bites Recipe

Found this in one of my magazines while seraching for recipes for a bridal shower brunch I am giving. The flavors here are great! Bakes in a 9x13 pan, so, you can cut small appetizer squares, or larger squares for a meal.

Ingredients
  • 1 10oz package frozen chopped spinach
  • 2 T Olive Oil
  • 1 c sliced fresh mushrooms
  • 1/2 c chopped onion
  • 1/2 c chopped red pepper
  • 6 large eggs
  • 1/4 t ground white pepper
  • /14 t nutmeg
  • 1/4 t salt
  • 2 8-oz ;ackages Muenster Cheese, grated

Directions
  1. Preheat oven to 350
  2. In large skillet, heat oil over med heat
  3. Add mushrooms, onions, redpepper, spinach, and seasoings
  4. Cook until veggies are soft
  5. Drain in paper towel lined colandar
  6. Whisk eggs in large bowl
  7. Stir in spinach mixture
  8. Add cheese
  9. Pour into lightly greased 9x13 baking dish
  10. Bake 25-20 minutes or untill lightly browned
  11. Cool for 10 minutes
  12. Cut into squares and serve
  13. ** Great with fresh fruit as a side
