How to make it

  • Cream the butter for about a minute with the paddle attachment in your mixer.
  • On low speed add the Parmesan, thyme, salt, and pepper.
  • Next blend in the flour just until blended. If the dough is too dry add about 1 tsp. water.
  • Turn the dough onto a floured surface and press it into a ball. Roll the ball with your hands to form a nine-inch log.
  • Wrap this log in plastic and chill for at least 1/2 hour or refrigerate up to four days. (I froze the log a few weeks and then defrosted in my refrigerator a day before using.)
  • When ready to prepare preheat your oven to 400 degrees with the rack in the middle.
  • Line a baking sheet with parchment paper.
  • Slice the log into 3/8-inch thick rounds and place them on the parchment paper.
  • Bake 22 minutes, turning the baking sheet 1/2 way through the baking for even heat exposure.
  • Cool on a rack.
  • When cool arrange the crackers on a plate and garnish with a few sprigs of reserved fresh thyme.

    Interesting idea about the bacon. My only reluctance to add the bacon, though, is the additional saltiness. I found the addition of salt was not necessary because the cheese has plenty and I would worry the bacon might take it a tad far. Anyone else have thoughts on this?

    These a cooling 'as we speak!" I added a little more thyme than the recipe called for. I'm thinking I bet small bits of cooked bacon would be good in this cracker, as well. I only say that 'cause after the crackers came out of the oven, I put jelly roll pan (aka to me as a cookie sheet) of bacon in the oven to bake 'cause we're having blt's for dinner. Hmmmm. I think I already rated this a 5 but if not I will do so now.
