Barefoot Contessas Parmesan And Thyme Crackers Appetizer

- 1/4 pound sweet butter at room temperature shopping list
- 4 ounces freshly grated Parmesan (one cup) shopping list
- 1 tsp. fresh thyme leaves shopping list
- 1/2 tsp. salt (I'll skip this next time, the cheese adds plenty of salt for my palate) shopping list
- 1/2 tsp. freshly ground pepper shopping list
- 1 1/4 cup all-purpose flour shopping list
- A few srigs of fresh thyme as garmish for the serving plate shopping list
How to make it
- Cream the butter for about a minute with the paddle attachment in your mixer.
- On low speed add the Parmesan, thyme, salt, and pepper.
- Next blend in the flour just until blended. If the dough is too dry add about 1 tsp. water.
- Turn the dough onto a floured surface and press it into a ball. Roll the ball with your hands to form a nine-inch log.
- Wrap this log in plastic and chill for at least 1/2 hour or refrigerate up to four days. (I froze the log a few weeks and then defrosted in my refrigerator a day before using.)
- When ready to prepare preheat your oven to 400 degrees with the rack in the middle.
- Line a baking sheet with parchment paper.
- Slice the log into 3/8-inch thick rounds and place them on the parchment paper.
- Bake 22 minutes, turning the baking sheet 1/2 way through the baking for even heat exposure.
- Cool on a rack.
- When cool arrange the crackers on a plate and garnish with a few sprigs of reserved fresh thyme.
