Roasted Parsnips

- 1 lb. parsnips, slender if possible so they won't be woody shopping list
- 2 t butter (or peanut oil if you want to go vegan) shopping list
How to make it
- Preheat the oven to 375 degrees.
- Peel the parsnips and cut off the stem ends and tips.
- Place in a plastic bag; do not tie off the open end.
- Microwave on high for 3 minutes, or until the parsnips are flexible.
- Line a pieplate ;--) with aluminum foil and place the butter in it; set in the oven for a minute to melt the butter.
- Add the parsnips and toss gently so that they are buttered.
- Roast in the middle of the oven for 20-25 m, or until the ends are brown and some surfaces are golden brown. If you like them somewhat caramelized, roast them a bit longer. Even if the ends look scorched, they taste fine (like a roasted marshmallow?).
