Roasted Parsnips Recipe
Roasted parsnips that aren't tough and dried out. Chomp chomp!

Ingredients
  • 1 lb. parsnips, slender if possible so they won't be woody
  • 2 t butter (or peanut oil if you want to go vegan)

Directions
  1. Preheat the oven to 375 degrees.
  2. Peel the parsnips and cut off the stem ends and tips.
  3. Place in a plastic bag; do not tie off the open end.
  4. Microwave on high for 3 minutes, or until the parsnips are flexible.
  5. Line a pieplate ;--) with aluminum foil and place the butter in it; set in the oven for a minute to melt the butter.
  6. Add the parsnips and toss gently so that they are buttered.
  7. Roast in the middle of the oven for 20-25 m, or until the ends are brown and some surfaces are golden brown. If you like them somewhat caramelized, roast them a bit longer. Even if the ends look scorched, they taste fine (like a roasted marshmallow?).
