- 3 pounds lean chuck roast or rump roast, cut of all visible fat into 1 inch pieces (I buy whatever is leaner and cheaper.) shopping list
- 1 pound frozen tri-color red, green and yellow bell peppers-frozen not thawed shopping list
- 1 jar (12 fl. Oz.) Trader Joe’s Cuban Mojito Simmer Sauce (a tangy citrus sauce & marinade) shopping list
- Simply put the frozen julienne pepper strips in the crock pot, add the beef cubes on top and then pour the sauce over that. I cooked it for 9 hours at 300 degrees although you can cook it for a little less or a little more. With a crock pot the cooking times vary any where from 6 hours to 8 usually. I did this for 9 hours and then served it over some mushroom Rice that I already had in the fridge. shopping list

- I’m not sure how many Trader Joe’s are all around the USA but I’m in Southern CA and I absolutely love the place. They have some of the most inventive, reasonable, good-for-you products on the face of the earth as far as I’m concerned. shopping list
