- 1 EXTRA-LARGE egg white, LITLY SHISKED shopping list
- 30ML sugar shopping list
- FILLING: shopping list
- 40ML amaretto liqueur (OR brandy) shopping list
- 80ML dried cranberries shopping list
- 460G FULL-FAT cream cheese shopping list
- 170ML CASTOR sugar shopping list
- 1 EXTRA-LARGE EGG shopping list
- 250ML CREAM shopping list
- 55ML cake flour shopping list
- 125ML blanched almonds, COARSELY CHOPPED shopping list
How to make it
- PRE-HEAT OVEN 180 C
- WARM THE LIQUEUR, THEN ADD THE CRANBERRIES AND LEAVEE THEM TO SOAK.
- SET ASIDE TO USE LATER IN THE FILLING
- ROLL OUT THE PASTRY AND CUT OUT 12 CIRCLES TO LINE A MUFFIN TIN
- PRICK WITH A FORK AND BAKE FLIND FOR 10MIN
- ROLL OUT THE EXCESS PASTRY AND CUT OUT 2MM STRIPS
- STICK THETOP EN OF 2 PASTRY STRIPS TOGETHER THEN TWIST THE STRIPS TO CREAT A ROPE EFFECT
- BRUSH THE EDGES OF THE BAKED PASTRIES WITH EGG WHITE
- STICK A PIECE OF TWISTED PASTRY AROUND THE EDGES OF EACH PASTRY SHELL
- BRUSH WITH EGG WHICTE AND SPRINKLE WITH SUGAR
- FILLING:
- BEAT TOGETHER THE CREAM CHEESE AND SUGAR, THEN BEAT IN THE EGG AND CREAM
- FOLD IN THE FLOUR AND HALF OF THE SOAKED CRANBERRIES
- SPOON THE FILLING INTO THE SHELLS
- TOP WITH THE REMAINING CRANBERRIES AND SPRINKLE WITH ALMONDS
- BAKE IN A PRE-HEATED OVEN FOR ABOUT 15 MIN OR UNTIL JUST SET
- SWITCH OFF THEOVEN, OPEN THE OVEN DOOR SLIGHTLY AND LEAVE THE CHEESECAKES IN THERE UNTIL COOL
